Healthified Alfredo Sauce

This is the easiest Alfredo sauce and although it uses less fat than the real thing, it has all the flavor and creamy yumminess you’re looking for in a cheese sauce. Add it to pasta, drizzle over those veggies kids love to hate or use it as the base of a white pizza, it’s all good.

Healthified Alfredo Sauce
Makes 2 cups
Ingredients:
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups 2% milk
1 teaspoon grated or minced garlic
Pinch freshly grated nutmeg
½ cup grated Parmesan cheese
Kosher salt
Freshly ground black pepper
Directions:
For the roux:

Heat a saucepan over medium heat. Add butter and melt. Whisk in flour and stir continuously for at approximately 3 minutes or enough time to cook out the raw flour taste. Roux should be slightly fluid and should not gain any color above a pale yellow.
For the sauce:
Warm milk over medium heat in separate saucepan. Whisk in milk and bring just to a boil. Whisk in garlic, nutmeg, cheese, salt and pepper. Reduce and simmer, stirring occasionally for 5 minutes.
