I at first served this fresh salad as is,
then later with a dollop of yogurt.
I found both methods to be incredibly delicious….
Serves: (8 to 10)
Bearrs Seedless Limes
were used in this recipe
from my indoor dwarf
citrus tree… Prep: 15 Mins.
Stand: 15 Mins.
INGREDIENTS
Dressing:
6 mint leaves, finely sliced
1 tablespoon freshly squeezed lime juice
Fresh Fruit:
1 mango, peeled and chopped
1 papaya, peeled and chopped
1 gala apple, cored and chopped
1 granny smith apple, cored and chopped
2 cups whole red seedless grapes
6 whole strawberries, sliced
1-1/2 cup pineapple, chopped
Garnish:
-Sprig of whole mint leaves

One of my favorite and most prepared recipes
I created when I was craving scalloped potatoes au gratin
and loaded baked potatoes at the same time…
Serves: (10 to 12)
Prep: 25 Mins.
Bake: 1 Hr.
Stand: 15 Mins.
INGREDIENTS
4 slices of bacon, cut into strips and browned
8 cups yellow potatoes, peeled and thinly sliced to 1/8”

I love to serve these lamb chops
with garlicy smashed potatoes
and salad drizzled with light vinaigrette…

 

Serves: (4 = 2 chops ea.)
Prep: 6 mins. |
Grill: 20 to 24 mins.
INGREDIENTS
1/3 cup balsamic vinegar
1 garlic clove, chopped
2 tablespoons honey
1/2 cup fresh parsley leaves
3/4 cup vegetable oil
1 rack of lamb (with 8 chops intact), I have the butcher ‘French’ the bone ends
2 tablespoons olive oil
Kosher salt and freshly ground black pepper, to taste
1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried)
METHOD
Place a grill pan over medium-high heat or preheat a gas or charcoal grill, and oil the grates.

Sear: 2 to 4 mins.
INGREDIENTS
***Scallops
- 1 lb. fresh bay scallops (or quarter larger sea scallops)
- kosher salt and freshly ground pepper (to taste)
- 1 tablespoon peanut oil (as this has high smoking point)
***Dipping Sauce
- 1 tablespoon fresh ginger, grated (or 1 teaspoon ground ginger)
- 1 garlic cloves, grated
- 1 green onion, minced
- 1 teaspoon dried cilantro
- 2 tablespoons rice wine vinegar
- 1 teaspoon toasted sesame oil
- 1 tablespoon soy sauce
- 2 tablespoons olive oil
